I have been wanting to post one of these "look at this great dish" posts. I watch America's Test Kitchen/Cook's Country every Saturday and love that show! This past weekend they made Icebox Strawberry Pie. I'm not usually a big strawberry pie fan, but this looked too good to pass up... so here goes.
Start with 2 pounds frozen strawberries...
Cook down until it measures exactly 2 cups.. it cannot be more!
Put back in pot.. add sugar
and this unflavored gelatin/lemon juice/water mixture
Let cool for 30 minutes

Add this homemade whipped cream/cream cheese topping and enjoy!!

It was pretty good. Don't know if I'll ever make it again, but all in all I think it was worth the wait. The cream cheese/whipped cream was a little too sweet for my taste (which is rare).
Then add one pound of fresh stawberries

Then pour into already cooked crust (I made that too, but forgot to take pictures)
And chill for at least 4 hours.. or in our case 24 because it took so long to cook the strawberries down that it wasn't chilled until after I went to bed so I made Nate wait until the next day.
