Thin Mint Cupcakes

Last year I had a great idea -- with the popularity of cupcakes why not mix the ever popular Girl Scout Thin Mints with a cupcake. I mentioned it to a couple of people at work and they wanted them ASAP!!

The problem... I ran out of thin mints. Sure, I could have bought the Keebler cookies that taste similar, but wanted to be authentic. So, this year I knew I had to do it.
First, I altered the oreo cupcake recipe I found on MyBakingAddiction.com. I did not add the chocolate chips that are mentioned in that recipe -- and made a few other minor adjustments.
To add the Thin Mints -- about eight to ten-- I just broke them right in to the batter. I did not crumble them, just broke them in to chunks.
I also used the icing recipe from the linked cupcake -- I like how white it is opposed to my typical icing recipe which is a little more off white/yellow. I did crush the Thin Mints that went into the icing. They needed to be small enough to fit through the decorating tip. I crushed them by putting about 8 into a Ziploc bag and then rolling over it with my rolling pin.
I garnished with a Thin Mint broken in half and stuck into the icing ---- WAHLAH!!!

I think it looks delicious and I'm happy to report everyone LOVED them. In fact, a guy at work took one home and told me it almost caused a fight when he found out his wife ate it.
I think if you look closely at the picture you can see small chunks of the cookie in the actual cupcake.
