Along with my Remicade infusions, I have started meeting with a nutritionist to make some adjustments to how I eat.
My goal with this was mostly to be better educated on food and to hopefully take a lot of the processed junk and high fructose corn syrup out of my diet.
She's had me up my water intake and add smoothies to my daily diet.
The part I'm not so excited about is that she's making me cut out gluten. I don't really think gluten is an issue for me, but she wants me to try it -- so out it goes. Did you know gluten is in like everything!! Not just bread, tortillas and regular flour but tons of other stuff including soy sauce and lots of things like that.
Fortunately, she had shared several recipes with me and I'm using extra time to search blogs and Pinterest for gluten free options.
There are lots of things out there, but it's hard to grasp a new way of doing everything (along with all the other change I have right now).
One of the biggest challenges for me is that I LOVE to BAKE! Well, without flour it gets a little tough. Cakes and cookies are a hobby I have and not one I want to give up. So I'm trying new things.
I really want to try these cookies -- they are chocolate chip and GLUTEN FREE! Although when you read what's in them it may scare you to try.
As for other meals, we are eating lots of fish and chicken, along with vegetables I've never really tried before. Snacks are rice chips, sweet potato chips, hummus with veggies or good ol' rice cakes with almond butter on top. I've also started eating dates. They aren't bad with peanut butter. Brixton even likes them.
It's interesting but so far mostly manageable.
Have you ever cooked gluten free? Any favorite recipes you can share?
As for my Remicade, I think it's getting a little more effective, but my doctor was hoping for a faster result. Since I still have days with pain he's monitoring me and if I'm not feeling a lot better by Christmas then I think he's going to go ahead and recommend surgery. I had my third infusion last Friday and haven't had any bad days this week so hopefully that's a good sign.

Look at this. I signed up for this a couple of weeks ago on the "clean eating" menu but they also have gluten free. You have to sign up for 3 month increments but at least it would give you some recipe ideas.

There are good peanut butter cookie recipes out there that use no flour so they are gluten free and also betty crocker has some cake mixes that are gluten free. I have a friend who was diagnosed with celiac disease while we were in college and it was really difficult for her at first but she actually enjoys the way she eats now it just took time and lots of trial and error!
You don't know me, I'm sure... no reason you would. But Alyssa (Jackson's mom from church -- trying to avoid last names) is a good friend of mine. So as you know... she might have some good ones for you, and may or may not know you're looking, since she's not doing her blog right now.
Also, if you have one of those Recipe for Hope cookbooks, there's a cookie recipe in there that I submitted called "Paleo Cookies." Very different, but very filling. If you don't have a book and want the recipe I can get it to you. Oh wait!!!! Except it uses tons of almonds, and I bet you can't have those, can you? Well, in any case, ask Alyssa.
It's tough, no doubt. But if you can do the wretched "o'dark- thirty report" where you stand on the side of an ice-packed Hefner Pkwy, tell us all that it REALLY COLD & slick, and NOT act like you are terrified that a MAC truck will come careening into you -- you can do this.
